IntroductionPeach is a deciduous tree, native to northwestern China. The peach has the botanical name Prunus persica and belongs to the Rosaceae family (Bassi and Monet 2008:5). The peach tree has a straight, smooth trunk with reddish to greenish bark in its first year of growth which subsequently turns dark silver gray (Bassi and Monet 2008:5). It would be a small tree but can reach 8 m if not pruned, the leaves are lanceolate but the size will depend on the vigor of the tree (Danick and Paull, 2008:719). He explained that this tree species has two flower buds flanking a thin vegetative bud (Danick and Paull ,2008:720). 2. This scientific name comes from the school of thought according to which the peach came from Persia. This view was believed to have been first published by Linne in 1758 (Bassi and Monet, 2008:1).1.2 Inflorescence and flowers The peach tree has a narrow, lanceolate shape, initially bent longitudinally. The flowers of this fruit are a deep pale pink, occasionally white. They appear just before the leaves, on short stems. In peach trees they are their own, in most trees they are in pears. Peach Uses The deciduous peach tree (loses its leaves in the winter) is probably one of the best-known fruit trees in the entire country. Peach producers target three markets: the fresh market, where the fruit is consumed directly, and the canning market, which is one of the largest peach and processing markets in the world (Okie, 2008:3). In 2010 we exported 11,550 tonnes per tonne, our R14 084 market being Europe and Western Asia. We import 1,077 tonnes while processing 97,320 tonnes in 2010 (DAFF, 2011). Peach is rich in vitamin A, C and a good source of energy and minerals (USDA, 2002). Farmers are free to sell their peaches however they like at the lowest price. m... half the sheet... is present. Some cultivars such as Early Dawn, Inkooos, Oomsarel and Boland are harvested early from November or December onwards. Other cultivars such as elberta and kakamas ripen until February. (PJC Kuun) Peaches should be fully ripe but still firm if they are destined for local markets and/or export, peaches should be picked when still slightly green although they should be sweet and well coloured. Peaches are never removed from the tree, they must be removed so that the peel is not torn from the stem. The pickers place the peaches and transfer them into sturdy collection boxes. The collection boxes are brought to the collection hall in trucks or wagons with tires (filled with air) so that they are not damaged by pumping. In the packing hall, peaches that are too small, too green and too ripe are then graded and sent for packing..
